How much meat for deer camp?

I am camp chef for deer camp this year.

There are 17 people (men).

Here is my menu :

Prime rib with potatoes (Sun)

Chili (Mon) - provided by someone else

Pork Shoulder with slaw and beans for dinner Mon.

Tuesday lunch are fatties and Mac n cheese.

Tuesday dinner is brisket and corn.

How much per person should I plan? We will eat leftovers Wed if there are any....

After I get amount I can calculate approx. cost per person...
 
You sure feeding them good, they will eat a whole steer(Prime Rib) after a hard  day of hunting. I am always worry when I do a prime rib on portions, so now I go for a boneless one(I know) it seem easier to judge. Looks like a great menu.

Chili (Mon) - provided by someone else I don't trust he will show up so plan on more.

Pork Shoulder with slaw and beans for dinner Mon. 1/3 LB per person on PP slaw and beans are cheap so don't skimp
At every deer camp I have ever attended the chef over works the meals. some will leave early, some will show up late, some will mot show. Grab your self a

Prime rib with potatoes (Sun)  Not gonna guess weight as it varies to much I'd buy 3 ea 7 bone prime ribs do a 10 lb bag of taters if any let over slice em and fry em with eggs for breakfast the next day

Pork Shoulder with slaw and beans for dinner Mon. I'm going to guess it's hunting camp and people are going to eat too much so figure 2 ea 1/3 lb sandwiches per person so about 11.5 lbs of finished product so start with 23-24 lbs of butts. Two batches of Dutch's Wicked Baked Beans. 5-5.5 lbs of Cole Slaw

Tuesday lunch are fatties and Mac n cheese. You know your crew are they gonna eat a 1/3 of a fatty or 1/2 each personally I'd error on the heavy side they reheat fairly well. 

Tuesday dinner is brisket and corn. I would start with 24-25 lbs of brisket

How much per person should I plan? We will eat leftovers Wed if there are any.... Hopefully with all that you will have some leftovers

My freezer is going to run out of room - I am doing turkeys for two different Thanksgiving get togethers and this is the weekend after.

I will make fatties ahead of time, everything else I will prepare there.  Wait for my deercamp thread!
 
WOW!  I have never hunted more than 20-50 miles from home BUT What a menu!  I am not versed on the proper etiquette  of "deer camp".  So you don't plan to do any hunting; are you just there to be the cook?  What I Do know is that a group of 17 men would eat the south end of a north bound horse after a day hunting.  What I can say is that when I was hunting, I was hunting!  Can you not come up with several meals where you could pre smoke meat and then use it for meals?  Stew.  Chili.  REALLY substantial soup.  Corned beef and cabbage ( pre cooked corned beef ).  Great pot of beans ( smoke meat added ).  Cornbread and or biscuits with each meal.  Biscuits, gravy and pre smoked breakfast sausage for breakfast.  Mexican style chili mac and cheese made with pre smoked pulled brisket or pulled pork or both.  Most of those dishes are off the top of my head and take less than a hour to prepare.  HEY! Even one night with a good home made pastrami, corned beef, balogna, sirlion, brisket, smoked meatloaf for sandwiches with all the trimmings.  Good fresh bread and quality fresh green veg. and tomato.  A sandwich and a good hot bowl of soup is a good thing now and then ( especially on a cold day ).  Grilled smoked steak and fried potatoes.  GOOD HEARTY mostly one pot meals so long as you pre smoke some meat.  All I can say is that if I were paying the prices it costs now a days to lease hunting land I would not spend hours cooking.  I want good quality food but I'd want to prepare the hard parts before I got there and spend my time hunting.  Just my opinion.  Keep Smokin!

I am going to BBQ - that's it.  Drink beer and BBQ - that's why it's called BEERcamp.

So I have plenty of time to make perfect BBQ.  I may shoot a deer off the back porch but not likely.
 
Pretty spot on, but one thing I'll add for the pulled pork, 1/3 pound per person is good with sides. I know hunting and all I'd probably eat three helpings of pulled pork and no sides. But the one thing I wanted to mention is take into account you only get a 40% yield out of a smoked shoulder/butt. So factor that in.
 
So do you think I need more than 22 lbs?.  That's about 8.8 lbs. finished.

One more? There will be 15 people there that night.
 
3 fatties are now in the fridge CHILLIN'!

Pepperjack cheese, jalepeno's, onion, green onion and cream cheese OH MY.

Rest of the meat is in thaw mode.

Will be packing tomorrow night!
 
BTW - everything was great - lbs. of beef/pork were spot on.

Brisket was fantastic - so was the prime rib - big hit.

Thanks all for the help!

My probes for the iGrill took a crap so that was interesting but all turned out well.  Any suggestions on new probes?  Maverick the only way to go?  I like the bluetooth with the iGrill.
 
Sorry to say I have one brisket pic. The rest was gone so quickly and I didn't have connection so I didn't have my phone. Will post brisket in a bit.
 
Are they the iGrill2 probes? If so did you see the recall on them a month or so ago. If they are the recalled ones you can get new ones.
