Well Happy Friday To All!!!!!!!!

Today was about a simple smoked duck salad and while my husband did the cooking today, and I am grateful no less, the duck was overcooked to my liking as I prefer it rare in the middle. Not RAW like my steak mind you, but rare.

HOWEVER, smoked on our tiny gas smoker, for 20 minutes (WAY TOO MUCH) at low heat, with pecan chips, this still had great flavor, and my simple salad and white pepper dressing that I whipped up, did too.

Happy weekend to all! Bordeaux from Trader Joe's was superb, bone dry, and a wonderful match! More of that tonight therefore! Oh my!

(Herbs de Provence & grapeseed oil on the meat before smoking, dressing over both salad & duck, once plating).

DRESSING: pink Himalayan sea salt with black truffle flecks in it, ground white pepper, apple cider vinegar, and grapeseed oil. AMAZING!!!!!!

Duck and Bourdeaux! Heaven. I begs to be slowly enjoyed with a half glass left to be sipped after the duck is gone. 

Sigh. You do good food, milady.

This was so tasty albeit more overcooked than what I love. And so all the more reason to try it again next week and get it right!

But indeed, Duck, Bordeaux, and the sun after the morning's snow. Who could ask for more, right?

Just catching up on some posts. And Leah this is a real five star presentation. Duck is so wonderful this time of year. It's evident that this one was very very extraordinary.

Duck is a treat and somehow reminds me of this season, as do rabbit, deer, and so it goes!
