Howdy all, Cmack from Onalaska, Texas checking in. Been a member since 08 but have only lurked and learned. Great forums, packed with a huge amount of info and helpful members. I've been Q-ing for many, many years but only gotten serious in the past 5-7 years. My real passion is sausage making and briskets but i pretty much try anything. My weakness is pork ribs, try as I might, I just can't get them to completely suit me. That being said, I am a perfectionist so I'm never completely satisfied with anything I do. Cook on a stick burner and a Masterbuilt MES 40 Gen 2. As I type this my smoker is smoking and I am following a recipe for twice smoked hams that I got off this site.

Glad you decided to start posting!! I don't know if a regular welcome is proper for someone who has been a member for 8 years, but I'll give you one anyway!!LOL
Welcome, from southern Ohio, to the best forum on the internet if you are looking to learn how to BBQ/smoke/brine/cure/inject. Well you get the picture if you can do it to to something you put on a plate to eat then someone here has probably done it. Use the search bar at the top of the page and you will be led to the answer to most every question you can think of. If you don't find the answer there then just post it and someone will chime in with their opinion on the subject.
Always remember the only dumb question is the one you don’t ask!!

About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing
and the list goes on has probably been posted. Remember to post a QVIEW of your smokes.
We are all smoke junkies here and we have to get our fix. If you have questions
Post it and you will probably get 10 replies with 11 different answers. That is
because their are so many different ways to make great Q...
