I got a nice surprise today. I was working on some photos and started wondering where my Dad had got off to. Went to check on him and found he had cleaned out our old wood finishing room in the shop and turned it into a smoking room. Complete with exhaust fan so I can run the MES in the winter!. It already has 2 8'x2' benches (need to be covered with formica) so we will be able to set up the grinder, stuffer, mixer, and slicer. In the winter I should even be able to control temp and humidity for dry curing. My vent pipe should be here today to hook up the side box on the MES to run the AMNPS. That's the box I'm going to use on top the MES.

The smoker on the cart.

The room. That's my 20.00 garage sale find slicer on the bench. It's cast iron and weighs about 50lbs.

Happy happy happy smoker!

Its nice to be inside away from the elements when smoking. You'll use it more in the winter like that.

I like the high duct. It should increase your draw thru the smoker that way.

Looks really nice, congrats.

No excuses now for not smoking for the holidays.
