You seem to have omitted the ability to vote for turkey in your poll.

As for me, I'm thinking about a turducken. Or possibly a variation, combining all three meats in individual portions. Haven't really decided yet.
I don't know why It left turkey out of the voting. I tried to go back and fix that as well as add another catagory. Maybe a Moderator will fix that for me.

Nothing, I no longer do holiday cooking. Its all the next generations time to enjoy cooking! Seriously, the kids kids have kids around here so they should enjoy making those memories we all have by now. What fun is it if you have no good blunders to laugh about. Its about family. They need to make some memories, lord knows I have enough stories floating around the kitchen already. I won't tell any, but some have grown over the years to monsterous proportions. LOL

Its their time to have fun. I play around all year, they can do the holidays.
I look forward to that with my kid. Only 16 more years to go haha :)

In the interim, I'm doing a spatchcock turkey roasted on the traeger. Brining, Herb butter under the skin and citrus fruit for interior steaming are planned.
 
I will be at the parents for a family get together and being a single guy they usually don't expect me to cook anything. I think I am going to make some smoked almonds and smoked eggs as some appetizers though.

Make fully loaded smoked deviled eggs! Crumbled bacon chives, grated cheddar so good!


I have not done deviled eggs before but I was already thinking about that. I am going to try to do a practice run at them this weekend.

Here is the best method to get the perfect hard boiled egg. Place your eggs in cold water. Bring to a boil, reduce heat to a simmer and let cook for 5 minutes. Remove pan from heat, cover and let stand 25 minutes. Immerse eggs in ice water, peel.

Place eggs in smoker and cold smoke for 2-4 hours. Half the eggs, scoop out the yolk. Mix yolk with garlic, salt, pepper, cayenne or chipotle (optional), crumbled bacon, shredded cheddar, chives, Guldens spicy brown mustard. Spoon or pipe into egg halves. Garnish with paprika and more chives.  There you have fully loaded smoked deviled eggs!

When I did the smoked eggs over the weekend I actually baked them in the oven and they came out pretty good. I seasoned them with bacon salt first but only smoked them for about an hour though. I may have to try them longer next time.

I already had a recipe for the deviled eggs I am going to try but I think I am going to try yours as well eventually--minus the cayenne. Thanks for the good tips!
