Just checking in for the first time. I've spent quite a bit of time reading around here, and I finally decided to get an MES 30 (arriving tonight). I'm going to try and get it cured ASAP since my in-laws are coming in for the weekend, and I'm hoping to have lots of smoked meats to keep their bellies full and out of my kitchen.
