Smoked BBQ Meatloaf

After seeing all the threads about the meatloaf everyone was cooking on their smokers and how great they all looked, i figured i'd try it for this past sunday. I used Jeff's recipe, but added a pound of ground pork to it, upped the amounts of all the other ingredients and used a Vodka BBQ sauce recipe i found from the BBQ Pitboys. I shaped the meat mixture into two loaf pans and let it sit in the fridge for a couple of hours.

 

 

Then took them out and wrapped them in a bacon lattice

 

 

Left them sitting on the cookie rack which fit perfectly into the pan to collect the drippings as they cooked. Threw them on the smoker at about 240 to cook to an IT of 165. I mopped them with some more of the bbq sauce when they got to about IT155 just to add a bit more flavour, though i don't know that they needed it. Took the meatloafs down to the bar, sliced them up and they disappeared quickly. I didn't slice them very well, either because the bacon had hardened a bit and i didn't have a good knife for it, or they were just too moist, so most the slices fell apart or crumbled. I think next time i'll reduce the amount of milk added to the mixture since the pork has some extra moisture to it and wrapping it in bacon adds some to it as well.

 

 

 

Oh yeah, brought down some smoked mac & cheese with bacon, a recipe i also got from Jeff's site.

If I did it'd be a whole lot easier to get some of that Kona Pipeline Porter to use for some of the cooking, and maybe a bit of drinking while cooking

Yup! Our local brew pub has great beer but their food sucks!!!

Love a good Smoked Meatloaf , and the Bacon top it... the Mac-n' cheese looked good as well,
