That pile of sliced beef looks delicious David! Sorry it was such an ordeal, but like you said, alls well that ends well. BTW that mac & cheese with chopped brisket and chopped jalapeño looks and sounds awesome! Wish I woulda thought of that!

 What was it you said a long time back about MS. Red having a book or something about recipies on the Mes??? I do like my new little slicer. It isn't as like my 12" Univex but it did make short work out of the flat. I don't know what I need to add to my "Toys"?

Really liking the picture of the plate with the mac & cheese.  It all looks great.
Thank You for the kind words. I am of the believe If it has cheese, smoke, meat and a few jalapenos it  will be good. Kind of like my friends from the way south ( like my friend Foam)  A onion and a bell pepper and you can make a meal. Add a little oil and flour and you can have a party! Yes I can do that "Too". I look forward to the up coming cold weather.

LOL... I have looked at the thread a couple a times and    didn't realize I had not said anything. No, No, I am not at a loss for words, I just thought I had posted. Doh!

Nice looking grub man, but yours always is.

I removed the large cut to fit tin foil pan out of my smoker and replaced it now with littler ones. Gonna see if it makes the 40 easier for me to master that way. Its really not at all like the 30, completely different smoke. Thanks.

I am going to put the cooler weather to good use,too.  Looking to get back into some cheese smoking this weekend.

I think I may go to the smaller pans in the future. Some of the drippings will miss the pans but I will probably catch enough to keep me happy.

Now That is a stash of cheese.  Go big or go home, huh?   I couldn't cram fifty pounds in my small WSM.  Just ate some of the last from my last cheese smoke this evening.

I don't ever plan on running out of smoked cheese. Friends and family all know I have some and they expect me to have some at get together. When I find if on sale I stalk up.

Stocking up sounds like a good plan.  No special cheeses around here just grocery store fare and it rarely goes on sale.  I store mine vacuum packed in the refridge too.  Works good.
