First time making jerky

This is my first attempt at jerky in the MES - normally make it in my dehydrator.

I didn't make a whole bunch- only started with 2 lbs. of London Broil.

Love the smoky taste!

 

I noticed for some reason my MES has a hard time producing smoke unless it gets up around 200 degrees.

It looks good. As for the smoke below 200° that is why a lot of us use the AMNPS.

So that's not uncommon then?  I will probably get around to an AMNPS soon.

No it is a common thing with electric smokers, The element that heats the CC is also what smolders the wood. At lower CC settings the element is not on very much therefore not much smoke.

I agree with David. I've done quite a few cold smokes with the AMNPS in my MES 30 Gen 1 and got great smoke each time.
