Hey hey, had to make some room in my freezer and came across some lamb breast. Decided to make some lamb pancetta with one piece, and cure the second piece the same, but with the addition of harissa paste. I tied the first piece like a traditional pancetta, but stuffed the second one in a beef middle and cold smoked it;

And into the smoker with some cheese...
Now off for an extended fridge nap / weight watchers program. Stay Tuned.
Also, a long overdue shout out to Todd and Amazen Products. I purchased a AMPS tray only to later find out that it wont work at my elevation. Some quick correspondence with Todd (on a Saturday whilst he was watching his sons football game) a replacement tube smoker was on it's way and works great! Thanks Todd
