I tried to smoke some beef liver stuffed with mashed potatoes and bacon and topped with onions. It was ok but it needed more bacon. Next time I'll put bacon on the top also. I really like liver and how it is cooked makes a big difference. I used hunt in AZ and there is nothing like fresh elk liver fried in bacon grease with onions and bacon on a big hard roll. Anyway I learned a little doing this liver and I'm sure I could do it better next time.
