No biggie, brined last night with a pinch of cure added. Just cause it was a sweet brine.

Smoked today.


No biggie

I made some biscuits


Made a strawberry cake ( I love making cakes now I can pile on all the frosting I want!!)

No biggie!!


BUT.............

I have been dying to try a side Mr. Case did here........

First I fried some bacon (Bacon grease not chicken fat)


Can you saute honey crisp apples? (in bacon grease!)


Clean and half some brussel sprouts! (the one at the bottom was discarded)


Add to the skillet! Salt & Pepper Add some caraway, Why? Because I like it!


They are looking happy! But where is the wet bar? Dun dun dunnnnnn!


Ok, just 5% but good!


Bubble Bubble toil and trouble......Hmmmm........ Remember that old no good fried bacon?


Sorry no Bear shot, the sprouts evaporated! Must have something to do with that 5% alcohol flashed off..... LOL
 
The chicken looks great Foam but I just can't go the brussel sprouts. They look good but they taste like someone ate them already.

Its ok, its why there are different foods..... so we can all enjoy some.

BTW I tried a hard apple cider with sunflower seed oil emulsion for a salad dressing, It was pretty snappy!
 
I am with Disco, give me the bird,biscuits and cake.

I love cabbage and brussel sprouts is just baby cabbages with attitude. Throw in a bit of sweet and some caraway its a very earthy taste between dill and anise to me. I do like it with both apples and with cabbage. Had not tryed it with sprouts, but it was really good.
 
Great looking meal Kevin! Just bought another batch of sprouts, may just have to cook a bird to go with them! A batch of the Portuguese sweet rolls, oh yeah!!!
 
All looks great. I may need to try the sprouts as well. I'll bet there is some gumbo in the future with that carcass........

Thank you Sir, smoked chicken gumbo tonight! Getting all the pork ground and ready to try some sausage tomorrow. I will have an electric grinder ordered the first of the week!

Thank ye Thank ye Thank ye...... You should try those sprouts too, its easy and you could do it in volumne and leave on the smoker! Quick easy different side dish.

Thank you Case. The ultimate compliment, I had to copy your dish. Great idea and it would easily after booze adding stage, sit up in a smoker.

How long did you cook the sprouts and apples?  I don't like sprouts but the wife does, and maybe with apples and beer I might like them.

I fryed the apples till softened, and added the sprouts, I cooked the sprouts till the got a nice caramalzation showing. Note the appearance in the picture before the bottle shot.

I don't use a lot of time/temperature type cooking, only when baking. Its smell and sight that tell me when I am cooking.

That isn't beer, thats hard apple cider, only 5%. but its a nice different taste in the sprouts and compliments the apple.
 
Made the Brussels Sprout dish this evening, and take it from someone who hates Brussels Sprouts this was outstanding.  The flavor profiles within this dish served to calm down the overwhelming flavor of the sprout.  Wife loved them and I will make them again.
 
Thats great because brussel sprouts are nearly always accesible. I am really glad you and your bride liked them. Always good to make brownie points before the holidays.

Nice looking bird there. I'm OK with the BS's although I like mine halved and then browned face down (no turning) in butter in a cast iron skillet. Makes most a believer that way. Your biskies look scrumptious.....I'm jealous......Willie

Thanks, I really apprceiate that. yes, the sprouts are pretty good, the acidity of the cider, the bitterness of the sprouts, the sweetness of the apples, the caraway wasn't really needed but I just like it with cabbage and apples so it seemed right.
