Turkey time!

My wife wants turkey for dinner!



No, not that one... This one:



I'm using my WSM 22.5, 15.5 brined gobler, kfb with kiawe and guava, spog w/ paprika, 280 degrees...

Three hours in:



Turkey is IT of 144 degrees.

I also threw in a St. Louis rib marinated Hawaiian style (soy sauce, brown sugar, ginger, garlic and chilli flakes).

Gonna be eat good tonite!!!

Ribs done. Just under five hours...



Turkey done about 45 minutes later.



Deboned and sliced up.




They were both excellent!!!

Great looking meal!! When I was working above Kona had a flock of 8 turkeys that would strut through the job site everyday right at noon!
