There are likely other places to find it locally, but I got it here http://stores.ebay.ca/wovenwiremesh/5-Mesh-/_i.html?_fsub=11522066018

Bottom 2 feet have been insulated with 2 layers of 6# Kaowool ceramic insulation, then covered with 24 gauge stainless steel. All I have left I think is to plumb in the stainless gas line to the outside.

Hi all!

So wrapped up the dogs share of the build today. Stainless gas line is plumbed in, complete with a dial indicator regulator. I salvaged a stainless steel butler cart, used one of the shelves with a lip all the way around, inverted it, added kaowool underneath, then screwed it to the floor of the smoker to rest the burner on. This gives me a 1"+ insulated layer under the burner.

For hanging rods, I am using 3/4" stainless gas tubing, cut to length. they are holding up my foil drip trays as well. May be a temporary solution, who knows. I wanted to get it christened (had some bellies cured that were crying to be turned to bacon!) First run (35 pounds) of bellies are currently in the smoke house under smoke from my AMNPS and maple pellets. Its dark now, so some daylight photos tomorrow!

Wow, looks great Bladebuilder,

I will be anxiously awaiting more updates and the pictures. Some day, soon I hope, I would like to build something bigger than my MES 30!

I'll be watching...great job!

So just a couple more pictures...

The inside with the insulation in place along the back wall, the burner, and stainless plumbing. You can see the stainless sheeting, on the left and right sides

The regulator

and the smokehouse outside on the deck.

and the virgin run

Looking really nice. I would love to have it in my back yard.

Did you only insulate the lower portion where the heat source is?
Yes. the top two thirds is bare cedar, wanted it to breath  a little. I thought on an all metal interior build, but that to me isnt a smoke house. Traditionally they were wood, so I tried to be at least a little traditional!

The link I posted are not racks. The link is for stainless steel mesh. I will be building frames for the racks out of red oak. (for strength) and attaching the mesh to the oak frame.

Ooooohhhh gotcha ..... Ok then not what I was looking to do . I'll be purchasing racks from restaurant supply store 16x24 . Fits my need . Thanks for quick reply
