Third batch of belly bacon and first batch of BBB made with Pop's brine. Turned out quite well I think. I just got a Chef Choice 615 slicer and was quite impressed with how well it worked. How do ya'll prep the butt for BBB? This batch turned out well, but I think I need to do better prep work on the butt before it goes into the brine. Next time I'll make sure and take more pictures.
