Hi I have built my first new smoker and I am trying to burn the old paint off I got it good and hot for about 4 hours then tried to scrape the paint off but only a little of it blistered do I need to get all the paint off? or could I just paint over it guess I could try to sand it off what do you guys think?

Its doing good but sometimes its hard to control the temp im thinking I need to seal the fb door and cook chamber door with a gasket to make it more air tight.

I would probably do the cook chamber door, but only do the firebox door if it really fits poorly. If you can shut the firebox vents and choke the fire you don't need a seal. It takes time to feel out your vent settings and how much fire you really need. Good luck and keep at it.
