After Running the local Kansas city area competition circuit for a several years I stepped away from that around 2000 and built a two tower trailer mounted vertical smoker. I can turn out around 50 slabs of ribs in 6 hours. each cabinet currently ahs 5 racks 18 x 28 with room for 2 more each. my cabinets started their life as proofing boxes for a commercial kitchen., I got them at an auction sold as scrap after their heating elements failed. Stripped out the wiring. added a vent and fire box. Now these boxes have a new life and cook like no body's business.
