This was 2nd attempt to smoke anything at all. I was very happy with how it turned out, and received many compliments. I can't wait to give it another try.
I got this meat from WalMart and was not happy with it having pre injected marinade. I have no idea what was in it and would prefer to make that decision on my own, not Tyson. However it was still good so I guess I can't complain that much.
Here are some pics of the process. I only smoked this meat for about 6 1/2 hours. I put it on at 6AM, set the smoker to 225, and went to work. I came home around 11AM and it was holding 240. I added more chips and let it go another 2 hours and then pulled it because the IT was at 199 (that is as high as my thermometer reads), wrapped it in foil and towels and put it in an ice chest for another 2 hours. (Thanks for that tip where ever I read it on SMF).
