My name is Joe. I live in NE Oklahoma and love to hunt and fish. My smoker is a Masterbuilt electric smoker. I have attempted to smoke a wild turkey breast from a turkey I killed, and it turned out horrible. It was so dry it had the texture of leather. I did not inject it but it was wrapped in bacon (for the most part). It hit a plateau and would not get passed it. I kept opening the door to check it because it had been around 10 hours and I was getting nervous. My dog thoroughly enjoyed it however.
The last thing I smoked was a bone in pork butt and it turned out awesome. I am planning on smoking another for a work party on Wednesday.
Are there any sections for wild game? Thanks for all the great info on here. I am excited to try new things and add to my repertoire.
