Just thought I'd share a couple of pictures from my mod today to add a second shelf to my Traeger 07C I purchased this spring at Costco. I am smoking two 16lbs briskets at 225. I've smoked for years on a New Braunfelds Bandera offset smoker and then a WSM 22" with great results. I haven't been as happy with the Traeger. I'm used to using Red Oak for brisket and apple for ribs. I don't like the Traeger pellets but I'm starting to get better results with a few other brands.

Any way, hope to keep you posted on the results if this latest smoke.

results.

Looks like a great start. Really like the picture of the two brisket in the smoker.   Which brand's of pellets do you prefer over the Traeger's?

I've used Louisiana Grills completion blend and worked great today on the two briskets. Also bought a bag of Old Hickory Oak as I like the oak flavor for brisket and even ribs. Will use some apple in my Amazing smoker with the ribs along with oak in the hopper. Here's a few pictures of the briskets this morning after a 16 hr smoke at 225 on the Traeger (2 x 16 lbs).

Thanks for the info on the pellets.  Those are some FINE looking finished pic's.   Those ought to make for some happy pilgrims at chow time.

Looks pretty tasty to me   let me give you my address
