Scallloped Potatoes With My Canadian Thanksgiving Ham

In my post of the Double Smoked Ham I did for Canadian Thanksgiving (http://www.smokingmeatforums.com/t/...he-star-of-canadian-thanksgiving#post_1251346) I noted that I didn't go with the traditional turkey. So, I didn't go with the traditional mashed potatoes either. I did my favourite with ham, Scalloped potatoes.

I started by making a cheese sauce. I melted 1/4 cup of butter and added 1/4 cup of flour to make a roux. I added 1 7/8 cups of milk and stirred until thickened.





I added 1 cup of grated old cheddar, 1/4 cup grated parmesan, 3/4 teaspoon dry mustard, 1/2 teaspoon salt, 1/4 teaspoon pepper and 3 dashes of Tabasco.




I sliced 5-6 cups of potatoes, chopped 1 1/2 cup onions and cut 1/4 cup of butter.

I put 1/3 of the potatoes in a greased casserole. I put 1/3 of the onions over the potatoes. I dotted the surface with 1/3 of the butter and then poured 1/3 of the cheese sauce over the top. I repeated these layers twice. I put the casserole in a 350 F oven, covered for 1/2 an hour. Then I removed the lid and cooked for another hour. I tested the potatoes with a fork and gave them another 10 minutes and they were done. I let them sit for 10 minutes before serving.

These are so good and cheesy. I just love them with ham.

Thanks, Case. Sounds like you should get cooking. There isn't enough great food like scalloped potatoes in the world.

Those look great Disco, very nice job indeed. I did a batch in the smoker took a little longer at 225 but it was over the top, try it one of these times you will not be disappointed

The DW was asking about a recipe for these over the weekend.

Recommended temp/cook time?  Think I'll try these in the Treager in the next few days

It depends how much you make but for the amount I made, I put it in 350 F covered for 1/2 hour, uncovered them and left them in 350 F for 70 minutes. I start testing with a fork after 60 minutes and stop cooking when a fork goes in with just a little resistance. I don't like them mushy.

I love scalloped potatoes, do you find the dryer irish potato is better than red potatoes?

Thanks, Foam. There is a fight about which kind of potatoes to use. My wife likes the creamier Red Norlands we grow better in this dish. I prefer bakers like russets. Fortunately, both are good.

But I could make a meal of those spuds!
