The first time I saw Bearcarver's double smoked ham, I knew it was going to be a favourite of mine. You really do have to try it.

Great post , Disco... :drool

 

I thouroghly enjoy a Double Smoked Ham ... I have this thing for good Smoke  flavor , and these do it for me...

 

I did a Spiral cut one ( the big name one) and it was Marvelous :drool

Thanks for sharing your recipe/technique, I may try some tweaks on mine the next time I do a double smoke. This past summer I offered to cook for my brother in laws wedding, 150 people and no I had never tried to cook for that large of a group. I had stuffed chicken breasts and over 25 pounds of pulled pork going on a smoke vault and a Brinkman, had two huge 20-25 pound hams off our own Berkshire pigs. (We don't seem to butcher anything small). It was projected to be in the 90's that day and my wife was saying "you need more ham", so rather than argue for long about it being "too damn hot for ham" I had probably 60+ pounds of ham on a Big Poppa drum smoker. To add to the pressure of the day they asked 3 weeks before the wedding for me to officiate. Well at the end of the night I had people scraping up the last bits of ham asking for more, enough chicken left over for lunch the next day and enough pulled pork for a couple sandwiches. Now the smoked baked beans......we had ton of those left......maybe too hot for beans.
