Ok just an update. The shoulders yeilded 5 half-trays full of pulled pork! Just finished cleaning up and making the rub for tomorrow mornings smoke (I guess it would actually be today huh?) I will continue with more pics tomorrow although they may be slightly delayed so that I can pay some attention to the people around us! :)

I trim the skin and make cracklin pellets out of it while I smoke the picnics.

Looks great so far.

From one tall guy to another. Help your back! Get some 1" or 1 1/2" SC40 PVC and make extensions for the legs on your tables. This way your work surface is up and you are not hunched over.
