Hey guys (and gals?)

I've been smoking for a few years and having a lot of fun doing it. I decided to go BIGGER this year due to the record sockeye run we had in Vancouver Canada this year. I just built my first plywood smoker and had great success with it so far, there's always room for improvement though. Looking forward to talking with some folks that are as passionate as I am about this stuff.

Glad you joined the group. The search bar at the top of any page is your best friend.
About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing
and the list goes on has probably been posted. Remember to post a QVIEW of your smokes.
We are all smoke junkies here and we have to get our fix. If you have questions
Post it and you will probably get 10 replies with 11 different answers. That is
because their are so many different ways to make great Q...

You have a nice mess of Reds there. I caught several Chinook and a few Silvers in Oregon this fall but have never had Sockeye to smoke. I have been told they are great. I have caught and smoked a lot of Kokanee which are the same fish but lived in fresh water only. Have you had both and if is there much difference in flavor?
 
Welcome, from southern Ohio, to the best forum on the internet if you are looking to learn how to BBQ/smoke/brine/cure/inject. Well you get the picture if you can do it to to something you put on a plate to eat then someone here has probably done it. Use the search bar at the top of the page and you will be led to the answer to most every question you can think of. If you don't find the answer there then just post it and someone will chime in with there opinion on the subject. Great looking salmon!!

I've only ever grilled Kokanee when camping. I don't think they can compare to the delicious oiliness and girth in the ocean salmon. But I love it all!!! Thanks for your welcome
