OK, the verdict is in. I sampled each type; plain, plain with sauce, barked, and barked with sauce. Each type was sampled on a plain hamburger bun. They each had their own appeal, but it was easy to conclude which one was best......whichever one I was eating at the time.

The sauced pork was better to me, but my wife preferred it without. I foiled the dry-brined butt at 165 degrees, but I let the barked butt go all the way without foil. The barked butt was firmer than the brined butt, but the brined butt was much moister as you would expect. Did I eat too much? Yes I did! My stomach is so tight you could break a beer bottle on it.

Send samples I will help with the judging! I prefer bark and just some sauce on top personally.
