Jumbo Mini Tri Tip w/Pics

As part of my learning what my new toy can do, I have to cook a variety of things. So for education I have to do this.....

I picked up a tri tip today and decided to do a variation of a reverse sear, but it is really not. I got the smoker to 185 and placed the trip tip in. I seasoned it with a store steak seasoning, need to use it up....... I placed my probes in place and let it go........



After it reached my desired IT of 125, I removed the pot section of the smoker leaving the lid on, so all of the charcoal would light and get the grate hot for searing.



I wanted a nice char on the meat, so thw fire was still going good when I put the meat on the grate.



I wanted some grilled asparagus. So on it went as the tri tip rested.



Dusted with a bit of fresh grated parmesan cheese....

On my plate I drizzled the asparagus with some 18yr Balsamic and added some mashed potatoes.

I love balsamic. Unfortunately I can't afford anything over 18yr. At work I get to play with 50yr and 100yr. Those are simply amazing!
 
Oh Man, Out Of The Park!!  My two faves, Tri Tip and asparagus.  Great char, too... Nice job!  Taters look like they may have been, ..amended...a bit too?

Thank you. My wife is very conservative with the food she eats, so grilled asparagus was new for her. I think it went over well, just no balsamic for her. I love mashed potatoes with beef. Not sure what was amended was for on tators? I only make skin on mashed tators at home. Sour cream, butter, milk and S&P very simple and yes they have lumps. Only way I like them, not the under cooked lumps thoe. Whipped potatoes are another story....

Skin on mashers is the only way to do mashed taters!!!

Look fantastic. Nicely plated. That is the best thing about a new smoker, You get to try it out on everything you have ever cooked before just to see how it does.

I have a hard time passing them off at family gatherings! Finally got the wife to admit she likes them better! But the rest of the family thinks taters need to have the texture of whipped cream... And loaded with all kinds if other stuff too. I just want a little garlic in them that's it!

I don't give them a choice for family gatherings. I tell them my peeler is broke and if they want them peeled they can do it. I make it the way I like it. So they eat what I serve. I agree simple is best, mine have a little more then just garlic, but are simple and quick to make.

Oh man, everything from the color to the plating look awesome. Makes me hungry after just eating!!!

Thank you. I love balsamic. In Cocoa Florida there is a place that sells all kinds of infused balsamics. My oldest daughter and I will go and get a couple bottles to play with every so offten. I still like the ordinary 20yr aged best.

Balsamic adds so much depth to everything. Adds some nice sweetness. How can you go wrong.

If I ever get near Cocoa Florida I will look that place up.
