Hello everyone. So as you see in the title I'm from south Louisiana in the heart of cajun country. In the vicinity of Lafayette, Louisiana. I'm passionate about cooking, grilling, bbqing and I'm starting to try true smoking. I've done a fair amount of research online and this forum seems to just about have it all. I like the lay out, its simple to use and it looks like there are tons of active members. I'm a weber guy, I have a few kettles and a jumbo Joe, I also scored a 97' redhead gasser that will one day be a restoration project, I have a few other gassers and outdoor burners. For smoking I decided to skip on the WSM and go with a UDS......im now in the process of building one and that is what I will use for smoking. I hope to gather as much of your wisdom as I can and I hope only to screw up cheap leg quarters in the process of learning.
Here is a pic of the beginning of the UDS project. Idrilled 3 equidistant holes before the burn to help with airflow during the burn. Those obviously will be the intake holes. Ill post more as I do more.

Glad you joined the group. The search bar at the top of any page is your best friend.
About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing
