Trying Bearcarvers mustard and rub pork. Definitely gonna pan it with the apple juice just haven't decided about wrapping it. May wrap it later in the smoke than his recipe. Gotta do something different lol. Just hope it's half as good as his. Was gonna start at midnight but supposed to be storms moving in around 1 tomorrow afternoon and thought I'd get an early start.


 
I'm a big fan of not wrapping ever. So that's my vote no wrap, no pan, no foil!

I am a huge advocate of cooking the day before I need /want it. Takes out the stress, and nobody ever taught pigs how to tell time. I have them finish  in 13 hours and in 23 hours, same size butt. Butt you'll see it happen too once ya start smoking. Hit that sucker with a little finishing sauce and let it sit over night,  ZOMG its good.

Been smoking for years just new to the mes and back on the forum. Had an account years ago under cblake187. Searched it and found my old pic with my cast iron pig but couldn't remember the email or password. That was before my wife passed on, different time and world now. Went through some rough times and a heart surgery last year. Now I'm engaged to a lifelong friend and our girls(hers 15 and mine 6) are truly sisters fighting one minute taking up for one another the next. Life is good. Glad to be smoking again,to me its medicine for the soul with the bonus of being delicious! Sorry for rambling back to the smoke. Rained all day on and off yesterday trying to sneak this one in. Ditto on the finishing sauce. Mine is simple cider vinegar,brown sugar,water,tad lemon,black pepper,paprika,and ghost Chile powder instead of cayenne. Me likes it hot! They're fond of the Shed southern sweet. I use a little Stubbs spicy sometimes.

Well had a family emergency come up no final pics but it is delicious. Great method bear. I did foil it after 8 hours,it was different than my usual but no complaints. I did notice the mustard seems to block some smoke flavor but it was there and darn good. The mailbox mod worked flawless and is a keeper. 8 hours and the amnps was just over half burnt. Perfect consistent smoke(Thanks Todd!) And Bear is right in his post,save that jous it's some awesome stuff! Once again thanks Bearcarver,may not be my permanent go to recipe but I guarantee I'll do it this way again. P.S. ( I think my littlest one liked this one better than mine.lol)

 Mustard doesn't block smoke. 8 hours from half a load in the AMNPS isn't much smoke. That sounds like what I get when I mix Cherry with my Hickory. Cherry slows my Hickory down. Straight Hickory gives me 10 to 11 hours from a full load, but I don't use a mailbox.

As for foiling, you should try it both ways. No foil is fine, but I would not smoke it for the whole time without a pan to catch the drippings, or you'll miss out on the Awesome Liquid Gold Juices. I'd not take that advice.

No worries Bear. I havent cut any holes in the mailbox yet. Figured I could add but not take away. Was leaning towards more draft for the amnps but nice to hear it from experience. Looks like drilling time! And on the hijacking, if your making me laugh,learn,or look good its all good.:biggrin:
