Latest baby back rib smoke with Q

Hello,

 

Been jumping at any chance to smoke baby back ribs, I am trying to get it down.  Last week I returned my MES 30 and purchased a Traeger Texas smoker, I love the traeger so far, here are the ribs I did last weekend, I did 2-2-1 method and already pulled off a great looking smoke ring, they were a bit on the dry end though, I did both the bend and toothpick test and they were fine but not as juicy as some of the other times I have done baby backs, is there any sort of test that tells me I over cooked them? The reason I ask is because I am still trying to get used to the smoker and at one point the smoker shot up to 370 degrees :( 

 

Any feedback is appreciated, I was NEVER able to get a smoke ring before on my MES, do these look under/over cooked to you?

Your Ribs look great , as for how to tell if they are overdone , I would say the first bite...if they are tough , chewy , and black , I'd say they were... :ROTF

 

The toothpick test is about the best test ( I use the Bend test , out of habit) . But Ribs like you have shown , are IMO , marvelous... and good Smoke ring too!

I have another 3 slabs of baby backs going in this weekend, going to make them every weekend until i get sick of them lol

I use fhe bend test as well. I also like to trim a few small bones and wrap them in bacon! They make great snacks while working so hard:).

Did you let them rest? Maybe not as long as normal? I think they look perfect though.
