noob with some wings to smoke

I have 5 pounds of wings that are going into my masterbuilt 30" electric smoker tonight. My plan was to Rub and inject the wings with tony chas and butter then throw em in the smoker set to 275F until the reach 170F. pull them out and crisp under the broiler. sound good?

p.s. I made chicken legs the other night by smoking them at 275F until they reached 165F then I let them rest in a cooler for about a half hour. The legs wear super juicy BUT the meat had a slight rubbery texture. any help would be great,thanks!
 
Chefscott , try playing with the IT a bit and see if the consistency improves , your MB30 probably won't top 275*F  , other wise I would suggest a higher cook temp.

. Wait , you said you had nothing but the MB therm. as  stated , get a good therm

and go to the 165*F  IT mark and see an improvement

As far as the legs go, I smoke mine a around 300 and skin comes petty good. But check out Chef JimmyJ's post on this thread..........

I do my darker meat poultry to 180 IT. Just my preference in texture.
