I just wanted to say hello from the State of Hockey. (MN for you non-puck heads, lol)
Anyway, as the title states, I've been bit by the smoking bug. My brother and a friend of ours have dabbled with smoking ribs in the past and it got me interested. Then after I came back from Afghanistan this summer I was back home and my dad started smoking some ribs on his gas grill/smoker. He had to run an errand and asked me to tend the smoker while he was gone..............he never got a chance to touch his own smoker for the rest of the cook, haha. The baby backs turned out AMAZING!!! I was hooked from that moment on.
I just love the whole process......and I love the finished product even more. And it's very gratifying knowing I have a hand in the whole process. In the three months I've been home, I've built 3 UDS's......just finishing the 3rd one up this week actually. And I'm some what of a perfectionist so I keep making changes to the design/layout and scrapping the old barrels. My second UDS never truly got "finished".......I came across some design features I liked better than what I had at the time so I scrapped the nearly finished product and started over. I get my barrels for free so it makes it a little easier to just up and scrap a project.
My first UDS produced some of the best pulled pork I have ever had. I had problems controlling temps with the 3/4" intakes so I upped it to 1" and have been having more success.
I'll try and get some build pics up soon.
I've been lurking around on this site for a couple months now......there are some very very smart people here. I thank you all for the advice I have taken away from this site. I am by no means an expert but I want to sharing my experiences on this site. We were all new at this once. I am a skilled welder and metal fabricator and I look forward to contributing my knowledge.
