Hola!  It's been awhile since I posted here, but have been doing a lot of lurking and smoking.  So I decided to post some Q-View of my recent cooks. 

Been using the Rec Tec for the past year, and I LOVE LOVE LOVE this smoker!

I pulled out a rack of spares and cut it in half.  I typically don't square them up, just trim the excess and season them...followed by the 3-2-1 method.  Makes them tender and fall off the bone.  Wifey likes it like that, so guess what...that's how I cook them!  LOL.......

Anyway, on to the pics!

Thank you.  I don't like them quite this tender...I like a little tug to them, but happy wife, happy life!

And yes, she loved them!  So...all is well.
