I am doing this tomorrow after guard drill with my buddies.  There are four of us so I did cut off a couple steaks to keep at the house for a later date.

It was packed today! 10.03.14 I think it was still a little warm when I picked it up out of the display case.

I used a BBQ seasoning for this - will take to 135 IT and foil for 30 minutes or so and slice thick.

Can't wait!




 
Gonna be good! What kind if wood are you going to use for smoke?

I'd be half tempted to take it to 120, rest, slice and the sear each steak to doneness! Yumm!! Course I'd do it on the Mini, and I'd go caveman on the sear just to see the reactions as you throw the steaks into the fire!
 
LOL...gotta laugh at Case...going Caveman. I have yet to toss a steak in the coals......maybe some day. That's a sweet looking chunk of beef for 4 dudes....I'm thinking 130 might be just right with a 5-8 degree climb while resting it's gonna be quite rare IMO. With the grill on, close by, IF you wanna sear for effect it's bombs away.....Willie
 
Actually 5. I've gone caveman style on the ribeyes, no strip yet.

Best part is I will win the price of the strip plus some back from texas holdem.
 
Looks good! I had one on our countertop and our Jack Russell snatched it! He almost went on the grill after that.
