New to this site, saw a couple of post sounds like you guy have a lot of experience in the fine cuisine of smoking. which I a, very interesting of trying to better myself in doing. Saw mods that are popular in doing, so did I some. I have a Oklahoma Joes Longhorn Smoker with cooking chamber gasket set, latch set, custom basket 12 x 12 x 6, sealed fire box to cooking chamber. Ordered convection plate from Horizon bbq smokers, LOL as I see many members say. I'm a northerner so ill wait. any other advice wuld be greatly appreciated. thanks in advance.

About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing
