New to smoking

I am going to try my hand on my wood smoker and cook 4 cases of chicken quarters or wifes employment this next week, i have done practice run with a whole chicken cut in half and basted with olive oil then added rub and let sit 4 hours and smoked chicken at 225-250 for almost 2 hours.  chicken came out fair but i need more professional opinion how i should handle a larger amount of chicken and it turn out good, i have mesquite wood and large 2 door smoker and dual axle trailer with warming box...any ideas

Welcome to the board! I suggest you try more pilot batches before committing the whole 4 cases to a possible error in method. Try smoking 1/2 case first and see if you're getting what you want - if they work out, you can still serve them as a "double-smoked" sub-batch.

thanks so much, im pretty good with briskets and ribs but my wife spoke up and volunteered me to cook for employee safety store cookout so guess i best practice this week.  i test smoked a whole chicken 2 days ago and came out alright but i only rubbed it with some olive oil and rub then smoked for 1 1/2 hr alittle more and came out like i said alright nothing magnificent


also would spraying apple juice/apple cider vinegar on chicken ?

Glad you joined the group. The search bar at the top of any page is your best friend.
About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing

because their are so many different ways to make great Q...

Be ready for flareups. You will also have better skin if you can get the temp up higher.
