Picked up some eye of round beef roasts at Costco yesterday for a Saturday smoke. I just looked at Bear's Dried Beef, that one needs to be done next!
Started with a beef injection and refrigerated overnight:
Added a beef rub:
On to the WSM with cherry, pulled at IT temp of 140 and wrapped for an hour:
Made some sandwiches with mayo, provo, onion, horseradish, and pepperoncini and they were delicious.
