Marinate in your favorite teriyaki sauce for 4-6 hours, smoke w/ mesquite for 45 min or so at 225*, place in glass pan cover with FRESH pineapple slices, cover all with foil and finish in oven at 350 until IT of 160, pull from oven and leave foil cover on and rest for 20-30 minutes. Serve with your favorite rice, fresh corn on the cob and a MaiTai JMHO ....
