I live in Knoxville, TN, and have been a hobby meat smoker for about 5 years now. I enjoy cooking for friends and three very appreciative collies. I've had a Perfect Flame brand vertical propane gas smoker (from Lowes) since 2009. It is quite well seasoned but also has a lot of wear since it gets a good amount of use. One thing I don't like about it is when temps drop its hard to maintain heat with the thin walls. I've been tagged to smoke turkeys for our neighborhood picnic next month (largest audience so far!) and I'm considering upgrading to a new smoker. I use wood chunks (instead of chips) and run them dry as they seem to produce more smoke than wet wood. I think I'd like to stay with propane because I really love the flavor produced by burning wood and heavy smoke production. Want a unit that I can start and then check on occassionally. The Bradleys look well-built with good insulation for cool days, but I'm concerned the wood puck-things won't produce enough smoke. I also like to cold smoke salmon. Can't go too expensive, hope to stay under $400-500. What units would everyone recommend?
