A friend surprised me with a gift of a Dyna-Glo DGO1176BDC-D Charcoal Offset Smoker, so I am jumping right in despite being a complete novice.  Hopefully this will cut down on my spend at the local BBQ joint. I picked up Jeff's book, subscribed to the 5-day course and am already planning some mods to the smoker once it shows up next week.  Adding a gasket, fireplace caulk around the firebox, maybe some Rustoleum fireplace paint to help keep the rust off.  With the cold Chicago winters, maybe some insulation? 

 

Anyway, I am sure I will have a lot of questions and thanks in advance for all the help.

Glad you joined the group. The search bar at the top of any page is your best friend.
About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing
and the list goes on has probably been posted. Remember to post a QVIEW of your smokes.
We are all smoke junkies here and we have to get our fix. If you have questions
Post it and you will probably get 10 replies with 11 different answers. That is
because their are so many different ways to make great Q...

Hi Pat!

I'm fairly new myself but welcome anyway!

I am from the Peoria area so I know what you're talking about with the winters in the Midwest. I just read where a guy uses a welding blanket for an insulator to maintain heat on his smoker. You can bet that I will be trying that on my UDS pretty soon unfortunately. 😞

You will find about anything you need to know on this site. From modifications to your smokers, recipes for ribs and sauces, food prep, sides, and cook times. Following the instructions from these guys on here will make your friends thank you have been cooking for years!
