Took delivery of Gen 1 MES 40 last week and couldn't wait to try it out. First had to build a stand to get it off the ground a bit and to have a place for the mailbox mod. Quick run to HD and a few hours later (work done mostly by very talented father in law)

Next on to some chicken wings.

Jeff's rub on one batch. Teriyaki/ginger/soy/molasses on the other. Don't bother with recipe on the latter. More on that later. Vacuum packed and into the fridge for an overnighter.

While the wings were smoking, reduced the teriyaki marinade down to a glaze. Reduced It too much and salt taste was overwhelming. Live and learn.


Also need to work on my plating skills.

Overall, thrilled with smoker, mod, amnps, smoke, etc. Think I might be hooked!

Wow, I was hoping to do just about the same thing regarding the mailbox. Do you control the airflow to the ANMPS? I see a few holes in the door.
Nice setup, senior!

Elsos,

I followed Bear's advice about drilling 3 holes (2 low, 1 high) for good airflow. Didn't need to actively do anything else for good airflow. It just works!
