My attempt at a fatty....Results tonight!

Just smoked my first meat last weekend and while browsing all week decided I wanted to make a fatty as they all look tasty.

This is my take, borrowed somewhat from the forum and then added a bit to it.

Making 2....only got pics of the first one in the process.

1) Italian sausage meat filled with pepper jack cheese and sauteed onions/mushrooms/green peppers/jalepeno's and wrapped in bacon

2) Ground beed 80/20 filled with provolone cheese and spinach leaves, garlic, oil, salt/pepper/oregano and wrapped in bacon

The bacon weave isn't that bad, but this is my first go with thin stuff as we usually buy thick cut and it was a PITA.

Just put everything in the smoker, will update in a few hours!






 
Well that was fast! It's been 2 hours and inside temps are 178*.....bacon doesn't look crispy so I'm gonna toss it in the oven real high for a few to try and get it crispy.
