Freezing fresh sausage

I know this has been covered in the past but how do you vac seal your fresh sausage and still keep its shape?

I've been freezing it on cookie sheets first but it's a pain in the a$$ cause it all sticks together on the sheets and I don't have enough room to spread them out.

Also I like to have them frozen separately so I can put them in a big ziplock and take out a few at a time or just 1 at a time if it's just me eating.

Well the par freeze it was makes the fresh sausages keep their shape. The next time I do it, I plan on stuffing, twisting, and then cutting into single links and freeze that way before I put them in a bag. Maybe try a layer of Saran wrap under them to be able to remove them better? Or a light spray of Pam?

Freeze them on parchment paper....

That is what we do with all our meat/fish etc. if needed you can even layer with parchment in between. Then we vac pac

I freeze mine first and then wrap them in plastic wrap in the size I will use (usually 6 sausages a package as there is only She Who Must Be Obeyed and I at home). Then I put the packages in a large ziploc bag and take the packages out as I need them.

Wax paper works as well. I place a layer wax paper down on a cookie sheet, put the sausage on, cover with more wax paper. Freeze then bag in zip lock while wrapped in the paper . Works well for me. I can take as many out at a time as I need.

Here is my simple solution and it works very well.  Use one of those throw-away plastic bags that you take for fresh produce at the grocery store.  Then place your product into your vac-bag.  Easy-pleasy.  Works with all wet, sticky stuff.

I tryed pre-shaping and freezing the sausages, look like little hockey pucks. They thaw faster, but they seems to pick up smells even in a ziploc. It might be fine in a vac-seal bag.



I even thought of the chub bags, they are close to the breakfast sausage type bags. But.... I am cheap I guess. So far I have been really happy with these.  It allows me to set the size and quantity so I have what I need when I need it. Waxed paper doesn't stick, and when rolled right it takes all the air pockets out.


Works fine for me so far.
