My name is Ross Cravens and I am new to the forum.  I am a proud Texas Aggie and I am originally from San Antonio, I am now located outside of Denver.

I have done some smoking before on borrowed horizontal smokers with some success and I am normally very successful on a grill.  I am pretty good around the kitchen and primarily do all the cooking around our house.

I would like to get into smoking a little more and I just bought a vertical smoker with an offset firebox.  It is a Dyna-Glo smoker.  I bought it yesterday on Amazon and it should be delivered tomorrow.  Since I don't have a clue where to get any good wood around here, I bought three 5 pound bags of wood chunks to get me started.  I got Hickory, Mesquite, and Pecan to get me started.  I have also bought Jeff's Rub and Sauce recipes.

My new smoker should be on my door step when I get home from work tomorrow so I am going to get it put together and get a fire going in the box to get an initial cure in her and be able to play with temp control before I put any meat on it.  I will probably take off a little early on Friday and throw some chicken and maybe a smaller cut of pork on it, of course trying out Jeff's rub with them.

The first full day I can get at the house (when football, soccer, and other family functions slow down) I want to stack it with a couple of racks of ribs, pork butt, a full chicken, and some sausage and heads of cabbage on top for the last hour or so.  I thought I was going to get to do it on Saturday but I was informed last night that I have a busy Saturday in front of me

I look forward to being a part of y'all's forum and learning from all the master smokers on here!  If there are any steps I should take with a new smoker other than what I described above, please let me know!

Glad you joined the group. The search bar at the top of any page is your best friend.
About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing

We are all smoke junkies here and we have to get our fix. If you have questions
