Decided to throw my hat into the snack stick arena. Started with some ground beef and country style ribs that I ground myself. Had a spice mix from gander mountain that I used in this trial run. After grinding my pork I mixed the two together then added my spice and cure mixture to the bowl. Mixed till good and sticky. Started the stuffing procedure with a couple of blow outs but it was smooth sailing from there. Made a lot more then I thought it was going to make for a five pound batch. Had them in the smoker for a couple of hours at the last temp I could keep it at. All in all they turned out pretty good. The two product inspectors think so as well. Oh I smoker these with apple wood chunks. Thanks for checking this out. Trying to post pics if it doesn't happen I'll keep trying :biggrin:

Looks very tasty. I sure do like snack sticks. I am about out. I have started using Bearcarvers Naked method.

Thanks David! When I'm out of these casings I might try the naked method for them. When I did a summer sausage I did it naked and think it turned out pretty good.

I currently have a grinder/stuffer combo from harbor freight. I will tell you the grinding part is a piece of cake. Stuffing with it gets a little complicated. The meat is so sticky it doesn't want to go down the hole. I will be saving up for a nice dedicated stuffer that's for sure. For a beginner like me tho I'll make it work for now.

Thanks Brew! Way back when I started making my own jerky I couldn't ever bring myself to buy that junk they sell in the stores again. I'm pretty sure I'll never buy those slim sticks again either. Can't wait to see the sticks you produce when you get set up.

Brooksy, totally agree with ya on the store bought stuff.... Yuck in my opinion ! I've made my own jerky for years now but lookin forward to making the sausages & snack sticks ! Again, yours look awesome & bet they were tasty !
