Hello everyone, my name is Damon and I am somewhat new to the smoking world. I just got an offset smoker and experimented on some turkey legs, some chicken legs and a full Turkey. I have had some pretty good success maintaining temp, however, I am not getting a lot of smoke flavor. I have used cut up logs as well as chunks, I have been placing the logs and chunks directly on top of the coals in the Smoke box which I now know is not the best route to go. It was suggested that I put the chunks in aluminum foil, I have also been kicking around the idea of putting in a grate a few inches above the charcoal in the smoke box. Any suggestions on how to get better smoke flavor while using the offset smoker?

  Good afternoon and welcome to the forum, from a finally cooling down East Texas. Lots of great people and tons of information.  

              On an offset smoker putting the logs on the coals should generate plenty of smoke. What kind of wood are you using ?

Thanks for the response! I used hickory logs, I cut a log into 4 smaller pieces and used 2 of the pieces. I am wondering if I had too much oxygen coming in and creating too hot of a fire because the logs caught on fire fairly quickly.
