Bear's snack sticks/beef logs and Summer sausage rolled into one

I have made Bear's Beef snack sticks and his Beef logs before with great results, so decided to get a little wild with the recipes and execution.  I slightly modified the snack stick recipe to personal taste, then increased the size of the sticks dramatically to log size and smoked 'em nekkid with no casing:biggrin: They are about standard summer sausage size and made with 90% lean Beef.  While they were fresh off the smoker, I blotted the fat with paper towels to soak up the droplets on the surface.

I couldn't wait for them to cool and just had to have a taste test. MmmmMmmmMmmmMmmmmMmmmmm! Yummy!

Thanks Bear:beercheer:  I used your snack stick recipe with a couple minor modifications, but made 'em loaf size for slicing like Summer Sausage.  A chunk of cheddar,  some crackers and they really hit the spot!  After smoking summer sausage, snack sticks and loaves naked, I doubt if I ever use casings again

Yes I see you made your logs bigger than mine (Great idea!!), and you probably added more spices, because my sticks are very mild, but I found my actual "Loaves" (below) are the easiest to make without stuffing, and you probably would like the heat a lot better than my Stick recipe. I'm real glad you like them either way!!!  Thanks for the report !!!

I don't like a lot of heat, so actually cut back a bit on the black pepper and Cayenne.  I increased the Italian seasoning and Garlic, then added about a teaspoon of Cumin.  I'm still looking for just a tad different flavor to add, but not sure what will improve on 'em.  Danged good stuff!!!
