I would like to say Im well experienced but ......yeah right.  I have  GOSM that I have been using for a little while now. I got interested in smoke nd borrowed my father in laws old school brinkman (big PIA) and decide to go bigger and easier and found a guy who was wanting to sell his cabinet for cheap...my favorite type.

I'm not to bad I have Ribs pretty well down now not to bad on pork roasts and ok with beef ribs (the wife likes ribs most not a fan of roasts that's why I feel they are my strongest.)  I have done a few tri tips (got the "marinated" small ones from Costco.....way to vinegar for my taste but the wife likes them)  and have tried one small brisket so far...not my best way dry not enough seasoning.  I am trying one tomorrow just a small point to try again hoping I don't kill it again.  i am using one of the rub recipes i got off her but cant remember which one but Thank You for posting it.  I have done chicken breasts with good results.

You have come to the right place. There are people on here at all skill levels. Feel free to ask advice and it would be great if you can contribute to others from your experiences too.

Browse the forums. There has been a lot discussion on marinades and you should find some recipes here that are low in vinegar and will suit your taste. Hopefully you will never go back to shop marinated meat again.
