My 2nd smoke ever and the 2nd of the weekend.

I wanted to smoke some wings for the game tonight, the wife wanted some chicken breasts smoked

So I made a brine and soaked the breasts for about 4 hours

Brine:

Slaughterhouse Poultry Brine
1 ½ Gal Water
½ C Salt - Kosher
½ C Dark Brown Sugar
2 tsp Garlic Powder
2 tsp Onion Powder
2 tsp Cajun Spice

Made 2 flavors for the wings:

WING 1

1/2 cup brown sugar
1/4 cup paprika
1 tablespoon black pepper
1 tablespoon salt
1 tablespoon chili powder
1 tablespoon garlic powder
1 tablespoon onion powder
1 teaspoon cayenne

WING 2

Lemon Pepper McCormick's and

Lemon Pepper Grill Mates

About 2 hours in the smoker and then a few minutes on the grill to crisp the skin

Overall, I think they came out great.  Like the lemon Pepper more!

I am so hooked...
