Change in Labor day plans - ended up doing a 10 LBS Boston butt on the modified ECB. The smoker was up to temp at 4:15am and on she went. Pulled after 13 hours, did hit a 2 hour stall, let it sit, covered for over an hour.
Had the ladies pull the pork and the rest was burping smoke history. Never got a finished plate picture, too busy eating.
Nothing fancy, basic dry rub, and moistened with apple juice / olive oil every 1.5 hours.
