New UDS smoker in Ct

Hello all. I recently built a UDS and have successfully cooked babyback ribs 3 times as well as some bacon wrapped meatloaf logs on it. Trying my first Pork shoulders today. I love tinkering and tweeking things and am almost never happy with something if there is a way to change or improve it. I also enjoy building and flying remote control helicopters and airplanes. Heres a pic of my UDS

About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing
